Use the grid without a ceramic deflector underneath for direct cooking over the charcoal. Add a Half Moon Ceramic Deflector beneath it to create an indirect cooking area for roasting, baking and low-and-slow dishes.

The half-moon design lets you combine compatible cooking surfaces within your EGG, giving you the flexibility to grill directly on one side while cooking indirectly on the other.
